BROWN GRAVY SAUCE
Roberts' GF Plain Flour30g1oz
Fat20ml0.7oz
Stock320-350ml11-12oz
Variations: Add finely sliced, lightly sauteed mushrooms, spring onions or bacon, red or white wine, fresh / dried herbs,Crushed peppercorns, tomato paste or mustard.  
Reserve 1 tablespoon of fat from the roasting pan. Add flour, stir to combine. Cook over a medium heat until the roux turns brown, stirring constantly. Add stock and cook for 3-5 minutes until the gravy sauce thickens to the desired consistency. Delicious served with roast meats, vegetarian loaves, baked or steamed vegetables. For gravy that is very low in fat, exclude the fat and combine the flour and stock together in a small saucepan. Stir over a moderate heat until the gravy thickens and has a smooth consistency.
