PANCAKES or PIKELETS
Roberts’ GF Self Raising Flour 275g10oz
Egg (55g size) (Lightly Beaten)1 
Soy Milk125ml4.5oz
Water125ml4.5oz
1-2 Tablespoons honey to sweeten, optional.Extra water or soy milk as required to adjust consistency as this batter may thicken on standing.

Makes approx 5 Pancakes or 16 Pikelets

  
Combine soy milk, water, honey and egg together, stir to dissolve the honey. Sieve flour into a bowl, make a well in the centre. Pour the liquid mixture into the well and using a balloon whisk gently stir incorporating the flour a little at a time. Whisk gently until the batter is free of lumps.PANCAKES: Spoon 3 tablespoons of batter into a heated, lightly greased frypan, cook for 2-3 minutes on a medium to low heat on each side. Serve hot with sweet or savoury fillings.PIKELETS: Spoon 1 tablespoon of batter into a heated, lightly greased frypan, cook for about 2 minutes on a medium to low heat on each side. Cook 4-6 pikelets at a time, depending on the size of the frypan. Serve hot or cold.
