Beat eggs and sugar on high speed for 5 minutes until thick, creamy and well aerated. Add sieved flour and mix gently for 1-2 minutes to maintain maximum aeration. DO NOT OVERBEAT. Pour mixture evenly on tray that is lightly greased. Preheat the oven and cook at 210°C (400°F) for 10 minutes. |
