BANANA AND HONEY MUFFINS
Robert’s GF Self Raising Flour400g 
Milk220ml 
Egg (59g size)2 
Butter (melted)110g 
Honey40ml(2 tabs)
Cinnamon¼ teas 
Nutmeg¼ teas 
Banana (mashed)½ cup 
Sift SR flour. Beat eggs until thick. Add honey, milk, melted butter, mashed bananas and spices. Make a well in the centre of the flour and add the wet ingredients. Mix lightly and quickly. Pour into greased 1/2 cup muffin pan. Bake at 210º C for 6-7 minutes. Reduce heat to 200º C and continue baking for further 8-10 minutes or until just coming away from edge of tin. Best served warm. May be split and buttered.
