| Dried Apricots, chopped | 1/2 cup | |
| Orange Juice | 1/4 cup | |

| Soy Compound | 1/2 cup | OR |
| Skim Milk Powder | 1/2 cup | |
| Soy Grits, pre-soaked, well-drained | 1/4 cup | OR |
| Almonds, chopped | 1/4 cup | |
| Sesame seeds | 1 tab | |
| Lemon or orange rind, grated | 1 teas | |
| Sultanas | 1/3 cup | |
| Glace cherries, mix of red and green | 1/3 cup | |
| Currants | 1/3 cup | |
| Glace Pineapple | 1 ring | |
| Coconut | 1/4 cup | |
| Coconut, extra, toasted | 1/4 cup | |

Simmer apricots, orange juice and honey over low heat for 10 minutes.
Blend in Soy Compound (OR milk powder).
Add Soy Grits (OR almonds), sesame seeds, rind, coconut, dried fruits and glace fruits, chopped fairly fine.
Mix well and leave to cool slightly.
Roll into log shape and roll in toasted coconut.
Refrigerate overnight.
Before serving, cut into slices. |
