Brownies using chickpea flour


  • 200g chickpea flour
  • 350ml milk
  • 200g dark chocolate - melted
  • 2 eggs
  • 100g caster sugar
  • 1 tsp baking powder
  • Butter, for greasing
  • Cocoa powder for dusting
  • Double cream, to serve


  1. Preheat oven to 180c and grease and line a brownie tin with baking paper
  2. Mix the chickpea flour and milk to form a paste (the consistency of thickened cream)
  3. In another bowl, whisk the eggs and sugar until pale and thick (thick ribbons/peaks), then mix into the chickpea mixture with the baking powder.
  4. Transfer to a bowl and fold through the melted chocolate
  5. Spoon the mixture (it will be like a mousse) into the prepared tin and bake for 20minutes. Test the centre with a skewer, the finished product will still be sticky. You want the brownie to be spongey but not firm.
  6. Cool to room temperature before removing from the tin
  7. Dust with cocoa powder and serve with double cream
